Virginia Gallucci
Founder of Pasta Special, Calestano · Parma 🇮🇹
Born in the hills of Parma, Virginia Gallucci is a pasta artisan who has turned her passion for fresh handmade pasta into an international story of tradition and beauty.
In 2022, she founded Pasta Special in her home in Calestano, a small village nestled between the rolling hills of Emilia. There, she welcomes guests from all over the world to experience the art of fresh pasta — a true expression of Italian conviviality, craftsmanship, and warmth.
Today, she continues to celebrate Italian tradition with a modern voice — one plate, one story, and one fold of dough at a time.

A 2 hours hands-on pasta experience with Chef Virginia Gallucci, where Emilian tradition meets fresh truffle.
• Make fresh pasta dough from scratch, guided step by step.

Discover two pillars of Emilian (Northern Italy) pasta in one one of a kind pasta making workshop:
1️⃣ Handmade Tagliolini
Knead, roll, and cut traditional egg pasta using classic Emilian techniques. Learn how to achieve silky, golden strands using the freshest ingredients.
2️⃣ Truffle Ravioli
Move from sheets to fillings as you craft ravioli with a creamy blend of potatoes, Parmigiano Reggiano, and freshly shaved black truffle — sealed to perfection using traditional techniques.
Work with fresh black truffle (Tartufo Nero Fresco d’Emilia), flown directly from Italy. This prized ingredient takes center stage from dough to final plating, filling the room with its unmistakable aroma.
